Ingredients:
Oatmeal Cookie base
- 1 ½ cups rolled oats
- 1 cup whole-wheat flour or corn flour
- ½ tsp ground cinnamon
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
- 1 large egg
- 2/3 cup sunflower oil
- ½ tsp vanilla essence
Topping
- 220ml cream cheese, at room temperature
- ½ cup plain full fat yogurt
- 15-30 ml confectioner’s sugar (to taste)
- 5 ml vanilla essence
- 1 cup strawberries, washed, hulled and sliced
- ½ cup grapes, sliced and pitted
- ¼ cup blueberries
Method
- Preheat the oven to 180 C.
- Pizza base: combine the oats, flour, cinnamon, baking soda and powder and salt
- In a medium bowl.
- Combine the egg, sugar, oil and vanilla in another bowl and whisk together.
- Mix the wet and dry ingredients together until well combined (it is a dry mixture).
- Turn the dough unto a prepared baking sheet and press into a 2cm thick circle.
- Bake the crust until slightly brown around the edges, or remove from the oven after 20min before brown but still slightly soft (see photo for colour). Let the curst cool on the baking sheet.
- Topping: beat the cream cheese, yogurt, sugar and vanilla in a bowl until smooth.
- Spread the mixture over the crust and decorate with the strawberries, grapes and berries
