These Baked Avocados with Strawberry Salsa would be SO PERFECT for a Spring brunch or party!


  • 2 Ripe Avocados
  • 15 ml of coconut oil
  • 1 red or white onion chopped finely
  • 2 sprigs spring onions, thinly sliced with white & green parts
  • 30 ml ricotta cheese, crumbled
  • 30 ml fresh coriander or flat-leaf parsley, thinly sliced
  • Pink Himalayan salt to taste
  • Optional: 15 ml Balsamic vinegar


  • Preheat the oven to 180 degrees Celsius
  • Cut each avocado in half, remove the pit. Place them flesh side up in a baking dish. Cut a small bit of the bottom of the rollover. Rub a thin layer of coconut oil over the flesh of each avo.
  • Bake for 8 minutes.
  • Meanwhile combine the chopped strawberries, sliced onion, ricotta, coriander and vinegar.
  • Once the avos are ready, spoon some strawberry salsa into the cavity of each avocado half.
  • Drizzle with a sweet balsamic reduction or olive oil.
