Sweet things for summer!

We are all aware of the battle with reducing sugar in our diets, there is almost no middle ground! I have found that the only way to reduce sugar intake in your diet is to eliminate sugar totally!!!

But if you do not want to take the elimination road, there are other options such as:

  • Always bake your own sugar treats, to regulate quality and amounts!
  • Exercise or move daily! Burning excess sugar as fuel is a sure way of reducing blood glucose levels.


For the brownie

  • 2 eggs
  • ½ cup (125g) salted butter
  • 225 g dark or milk chocolate
  • 5ml vanilla extract
  • 5ml baking powder
  • Pinch of salt
  • ½ cup sugar
  • ½ cup flour


  • 225g strawberries, sliced
  • 170g dark chocolate
  • ¾ cup heavy cream


  • Preheat the oven to 180 C. line a 160cm square baking pan with aluminium foil, leaving overhang on the sides. Oil with a few drops of sunflower oil.
  • Melt the chocolate and butter slowly in a pot until smooth.
  • Mix the eggs, sugar and vanilla in a bowl, add the baking powder, salt and flour, mix well.
  • Add the melted chocolate and butter mix to the flour mix and mix until combined.
  • Pour the batter into the prepared pan, spread evenly and bake for 20-25 minutes. Keep an eye all the time for the brownies not to run over the pan.
  • Let browning cool completely. Cut them into preferred block sizes.
  • Sprinkle the strawberries on top of the brownies, and cover with chocolate cream.
