Ingredients:

2x Fish medallions

1x Egg

1 Cup oat flour or bread crumbs

Salt & black pepper

5 ml Cape Malay curry powder

Farm butter

Olive oil

6x Burger Bunds

Fresh lemon slices, to serve

Sauce

20 Fresh or frozen strawberries

¼ Teaspoon cumin seeds

15 ml Water

15 ml Honey

Method:

  • Wash the strawberries and cut them in half, keep aside @ room temperature
  • Place the strawberries, cumin seeds, and 15ml water in a small pot, cook over low heat until the strawberries are soft (about 15 minutes). Blend the mix until smooth.
  • Whisk the egg in a shallow bowl and coat the fish medallions with the egg, sprinkle each medallion with salt, black pepper and Cape Malay curry. Now coat the fish with bread crumbs or oat flour.
  • Melt the butter and olive oil in a pan, and fry the fish until cooked but still moist.
  • Slightly heat the strawberry sauce.
  • Build your burgers with Pak Choi leaves, red onion, fish medallion, strawberry- cumin sauce and a fresh slice of lemon.
