Ingredients:
(serves 8)
- 1 cup dark brown sugar
- ½ cup salted butter, @ room temperature
- 1 large free-range egg
- ¼ cup full cream milk
- 15 ml vanilla essence or 2 ml vanilla pod seeds
- 2 cups cake flour
- 5 ml baking soda
- ¼ teaspoon salt
- 1 cup your choice of chocolate chips, coconut flakes, dried nartjie, etc.
- 8 sliced strawberries
Method
- Preheat the oven to 180˚C
- To make the dough: Mix the soft butter and sugar with an electric mixer until light and fluffy.
- Add the egg, milk, essence and blend well. Add the flour, baking soda and salt and mix until smooth.
- Add the strawberries and your choice of an add-on.
- Place some of the sliced strawberries on top for decoration.
- Bake for about 45 minutes until golden brown and set.
- Serve these Giant cookies for a children’s’ party or serve it with coffee for the adults.

My grandmother, mom and all of my aunts are big cookie bakers. I on the other hand have not followed in their footsteps. This laborious activity, exercised religiously during festive times of the year could just not get a foot-hold in my modern lifestyle.
It was only when I realised, that baking giant cookies, made the idea of baking for birthdays or teatime can become a much more welcoming activity to look forward to! To make this a healthier version, you can half the sugar and use double the amount of strawberries!
