Ingredients:
- 1x Malva pudding mix (bought from most stores)
- 200g fresh strawberries, to serve
Strawberry coulis
- 250g fresh/frozen strawberries, rinsed, hulled and sliced
- 100ml water
- 1x vanilla pod, cut a thin line down the length to release seeds while cooking
Method
- To prepare the malva pudding: follow the instructions on the box.
- Coulis: place the strawberries, water, and vanilla pod in a small sauce pan. Cook on low heat for 10-15 minutes. Pour this mixture through a sieve and press the soft strawberries gently through the sieve to form a thick fragrant fruit sauce.
- Once the malva pudding is baked, mix the strawberry coulis spoon for spoon with the butter sauce (prepared as instructed on the box). Press small holes into the pudding with a skewer. While the pudding is still hot, pour the butter-strawberry sauce over the pudding.
- Serve with fresh clotted cream or ice cream & fresh strawberries!
