Ingredients

(makes 10)

Strawberry sauce

125 g fresh or frozen strawberries chopped

45 ml granulated sugar

2.5 ml cinnamon powder

Filling & layers

250 ml fresh cream

30 x black sesame rice crackers (salted)

Lemongrass-Choc balsamic reduction (or any balsamic reduction)

Method

Strawberry sauce:

  • Blend the strawberries, sugar and cinnamon until smooth with a stick blender.
  • Beat the cream until soft peaks form. Gradually fold the strawberry puree into the cream until well combined. If needed, whip the cream to stiffen up a bit.
  •  Using three rice thins per stack, layer the black rice crackers with the strawberry cream. Garnish with fresh strawberries and the balsamic reduction.
  •  Keep in the fridge for 20 minutes to soften the rice crackers slightly, and serve!

These little sweet & savoury snacks are brilliant! They are super easy to prepare and super delicious. The original recipe used chocolate strawberry thins, but because I could not find thin chocolate wafers, I transformed this recipe by giving it a savoury twist and it worked so well! Spring is around the corner, and these mini treats are great to serve as a starter or as a snack.
