Flapjack recipe:

  • 2 cups cake flour
  • 20 ml baking powder
  • 2 ml salt
  • 60 ml sugar
  • 2 large eggs
  • 250 ml milk, full cream
  • 20 ml butter, melted
  • 10x fresh strawberries, washed, hulled and cut into small pieces
  • Store-bought or home-made chicken liver pate
  • Blue cheese, cut into thin slices


  • To prepare the flapjacks: Place the cake flour, baking powder and salt into a bowl.
  • Mix the sugar and eggs until light and fluffy.
  • Add the milk and butter to the egg mix
  • Mix the wet ingredients into the dry ingredients until well blended
  • Add the sliced strawberries to the dough and mix it in lightly
  • Melt some butter in a flat pan, and bake the flapjacks.
  • Serve the flapjacks with liver pate, blue cheese slices and fresh strawberries.

This is the ideal in-between meal for hungry or hangry times….. loaded with protein and balanced with the sweet fruity nuances of seasonal strawberries it is a pleasurable experience to calm one’s hunger. The flapjacks can be pre-baked and kept in an airtight container, have some blue cheese and liver pate in the fridge to build this little meal in no time.
