250 g fresh strawberries, washed and sliced

Fancy lettuce

½ cup dry quinoa

1 ½ cup water

5ml sea salt

125 g Fresh Blueberries

Fresh spring onion

Fresh mint leaves

Mediterranean cucumber, sliced

Fresh sweet peas (if in season)


  • Cook the quinoa for 15 minutes in the water until soft and fluffy. Remover from heat to cool down.
  • Place the salad, strawberries and all the other salad ingredients in a beautiful bowl.
  • Add the quinoa and mix gently.
  • Serve this fresh spring salad with a light vinaigrette such as: lemon juice, olive oil, salt and pepper
