Nut, Berry & Banana Quesadillas

Traditional Mexican dish rethink with this delicious combination of flavours!

Ingredients Serve 2-4

  • 30 ml natural creamy peanut butter
  • 2 whole-grain tortillas or gluten-free roti’s
  • 1 large organic banana, sliced
  • 4-5 strawberries, sliced
  • Pinch of cinnamon


  • Use any nut butter of your choice, such as macadamia or almond butter
  • In the place of cinnamon, use powdered ginger or Allspice mix


  •  Spread the peanut butter evenly over each tortilla.
  • Arrange both the strawberries and bananas over one of the tortillas. Sprinkle a pinch of cinnamon over the other tortilla. Place the tortillas on top of each other (peanut butter sides together) and press gently to stick together.
  • Heat a skillet over medium heat. Place the quesadilla in the skillet and cook for about 2 minutes on each side until golden brown.
  • Cut the quesadilla in quarters and serve with bacon and strong cheddar cheese!
