Nut, Berry & Banana Quesadillas
Traditional Mexican dish rethink with this delicious combination of flavours!
Ingredients Serve 2-4
- 30 ml natural creamy peanut butter
- 2 whole-grain tortillas or gluten-free roti’s
- 1 large organic banana, sliced
- 4-5 strawberries, sliced
- Pinch of cinnamon
Optional
- Use any nut butter of your choice, such as macadamia or almond butter
- In the place of cinnamon, use powdered ginger or Allspice mix
Method
- Spread the peanut butter evenly over each tortilla.
- Arrange both the strawberries and bananas over one of the tortillas. Sprinkle a pinch of cinnamon over the other tortilla. Place the tortillas on top of each other (peanut butter sides together) and press gently to stick together.
- Heat a skillet over medium heat. Place the quesadilla in the skillet and cook for about 2 minutes on each side until golden brown.
- Cut the quesadilla in quarters and serve with bacon and strong cheddar cheese!
