Strawberry and Baby Spinach Winter Salad with an Orange Dressing

Ingredients (serves two)

4 cups baby spinach
1 cup sliced strawberries
½ sliced avocado
30 ml raw almonds, chopped

Dressing:

¼ cup extra virgin olive oil
¼ cup freshly squeezed orange juice
5 ml honey
5 ml Dijon mustard
salt and pepper.

Whisk all the ingredients together. Serve dressing over the salad with a slice of rye bread.
